Easy Filipino Adobo Thanksgiving Gravy
A few Thanksgiving dinners across the country look a little more colorful than just turkey, mashed potatoes, and gravy: some Nigerian American households serve jollof rice as a replacement carb of choice, while a few Chinese American families choose roast goose as the main poultry dish instead. As America’s demographics have grown more diverse, so too have the ways the nation celebrates Thanksgiving.
Over the years, I’ve grown to become more proud of my identity as a first-generation Filipino-American, to appreciate the culture my parents brought with them from the Philippines. So, like many other immigrant households, my family’s Thanksgiving dinner is a little less traditional. On the American holiday, we hold space for Filipino flavors too. Alongside the servings of turkey roast and mashed potatoes, an adobo sauce finds its place on our table — a reminder of the country we came from, blending with the food of America, the country we find ourselves in today.

Yield: About 1 cup of Gravy
Easy Filipino Adobo Thanksgiving Gravy:
Ingredients:
- 2 tablespoons of Butter
- 2 tablespoons of White Flour
- 1 pouch of Fila Manila Adobo Sauce
Instructions:
1) In a deep sauce pan, melt butter on medium heat until slightly golden brown.
2) Gradually add in flour and stir well using a whisk until the mixture is smooth becomes a light golden brown
3) Pour in Adobo Sauce and continue stirring until gravy thickens to preference
4) Serve over mashed potatoes, turkey, beef, chicken, and more!
