Peanut Chicken Stir-Fry
In my teenage years, the Kare-Kare Chicken Stir-Fry was always a go-to weeknight recipe in my household. When I was craving some Filipino comfort food during a busy week, this meal was a saving grace because it didn’t take long and tasted out of this world! In a way, it fits perfectly into our hectic mid-week routine, even if my family’s schedule was tight.

Kare-Kare, is the Philippines’ delicious take on a hearty peanut-based stew. Creamy peanut, tangy coconut vinegar, date nectar, garlic, onion, and mild spices unite for a rich, savory, & slightly sweet celebration of Filipino flavors.
Four Servings
Cook Time: 10 minutes
Ingredients:
- 1 lb. chicken breast (cut into cubes)
- 2 Tablespoons of Grapeseed oil
- 1 ½ Greenbeans (cut into about 2-inch pieces)
- 1 ½ Red Bell Pepper (seeded and chopped into 1-inch pieces)
- 1 Cup Brown Mushrooms (sliced)
- 1 packet of Fila Manila Kare-Kare Sauce
Directions:
- In a large frying pan, or wok, heat oil over high heat
- Add the chicken and saute for about 2 minutes or until meat is lightly browned, but not entirely cooked through. Add the vegetables and mushrooms, and sauté for about 2-3 minutes. Pour the Fila Manila Kare Kare sauce into the pan and cook, stirring occasionally, for about 3-5 more minutes or until the chicken is cooked through and vegetables are crisp and tender.
- Serve with rice noodles and enjoy! It’s that easy!
