Pineapple Isla Rice

This bright, colorful, punchy rice gives the typical side a bright island makeover for any occasion! It never fails to take me all the way from Chicago to the Filipino seaside in just one second. The recipe makes 4-6 servings. Pair alongside Fila Manila Adobo made with your favorite protein, or just dig in plain. Additionally, add chopped protein and egg into the pan and combine to make a Pineapple Isla Fried Rice (serving this inside a half pineapple is optional, but highly recommended).
