Ube Overnight Oats
Just as our Kare Kare and Adobo sauces can be used as quick flavor-boosters in any dish, I like to treat our Ube Jam in the same way to jazz up my typical breakfasts. When it comes to easy weekday breakfast, I often reach for a jar of overnight oats I made the night before. After getting bored of the typical cinnamon, chocolate, and fruit flavor combos, I thought about adding some Ube to the mix. These Ube oats pair perfectly with other nuts and bananas in the mix as well for a nice rounded out breakfast. Top it with anything that your heart desires, including extra Ube Jam, honey, nuts, and bananas.

Ingredients
- 1 mashed ripe banana
- 3 tablespoons Fila Manila Ube Jam divided
- 1/4 cup old-fashioned rolled oats
- 1/4 cup milk (preferably coconut but any of your choice)
- 1 tablespoon chia seeds
- 1/2 tablespoon poppy seeds (Optional)
- 2 tablespoons Greek yogurt
- 1/2 teaspoon vanilla extract
- 1 tablespoon honey
- Sliced bananas, chocolate chips, nuts for topping
Directions
- Mash the banana in a large bowl. Mix in 1 tablespoon Ube Jam. Add old-fashioned rolled oats, milk, chia seeds, poppy seeds, Greek yogurt, vanilla, and honey. Stir the mixture until well combined.
- In a jar or glass cup, smear the remaining Ube Jam on the sides of the glass. Fill the glass with the oat mixture. Add toppings as desired. Cover and let sit in the refrigerator overnight.
- The next morning, stir in an additional dash of milk if desired.
